Two Yummy Treats For The Holidays

   So the festive season is around the corner. That means everyone is home and it’s time to bring out the burners and start cooking. Making things the whole family will love and can get fat on .😂😂😂

   I have two recipes everyone will love and it’s quick and easy.It goes well with family events where you will all be together playing games,watching TV or whatever.

And they are;

  • Funfetti Popcorn

I got this idea from “cooking classy” and its really good, especially if you have a sweet tooth.

Ingredients

  • 1/2 cup popping popcorn kernels 
  • Vanilla / Chocolate Candy Melts 
  • 1 1/3 cups broken pretzel pieces1
  •  (12 oz) bag green and red Milk Chocolate or M&MsRed , green and white Sprinkles 

Instructions

 Put popcorn into a large bowl place into the microwave(you can also just use a pan). Toss in broken pretzel pieces and M&Ms.
 Melt Vanilla Candy Melts in a microwave on 50% power in 30 second intervals, stirring after each interval until melted and smooth. Drizzle half of melted chips over popcorn mixture, then stir, tossing gently a few times with a rubber spatula. Then drizzle remaining half of melted chips over popcorn, and gently stir mixture until evenly coated (don’t over stir though or your sprinkles wont stick if the white chips begin to set and harden). Pour mixture into a single layer onto wax paper. Sprinkle entire mixture evenly with sprinkles (as many as you’d like) before vanilla chips set. Allow to cool and harden, then gently break into pieces and store in an airtight container.

  • White/Dark or Both Chocolate Chip raisin Cookies

    I got this idea from the people at sally’s baking addiction and added my own twist to it.

Ingredients

  • 3/4 cup butter softened to room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 3 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 2 teaspoons cornstarch (aka cornflour)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup white/dark or both chocolate chips
  • 3/4 cup dried raisins

Directions

  In a large bowl using a mixer, beat the butter for 1 minute until completely smooth and creamy. Add granulated sugar and mix until fluffy and light in color. Beat in egg and vanilla.In a separate bowl, whisk the flour, cornstarch, baking soda and salt together until combined.

  Slowly mix into the ingredients together until combined. The cookie dough will be quite thick. Add the white/dark or both chocolate chips and dried raisins  mix until evenly disbursed. Cover dough tightly with aluminum foil or plastic wrap and chill for at least 2 hours and up to 2 days.

  Chilling is mandatory for this cookie dough.Remove cookie dough from the refrigerator and allow to sit at room temperature for 10 minutes– if the cookie dough chilled longer than 2 hours, let it sit at room temperature for about 35 minutes. This makes the cookie dough easier to scoop and roll.Preheat oven to 350F. Line two large baking sheets with parchment paper. (Always recommended for cookies.) Set aside.Once chilled, the dough will be slightly crumbly, but will come together if you work the dough with your hands as you roll into individual balls.

   Scoop and roll balls of dough, about 1 Tablespoon of dough each, into balls. Place 10 – 12 on each baking sheet. Bake in batches for 8-10 minutes, until barely golden brown around the edges. They will look extremely soft when you remove them from the oven. Allow to cool for 7 minutes on the cookie sheet. If the cookies are too puffy, try gently pressing down on them with the back of a spoon. They will slightly deflate as you let them cool. And let cool.
